Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, oregano, salt, and pepper. Mix well.
In another shallow dish, beat the eggs until well combined. In a third dish, place the flour.
Pat the chicken breasts dry with paper towels. Dredge each chicken breast in the flour, shaking off any excess.
Dip the floured chicken into the beaten eggs, ensuring it's fully coated.
Finally, press the chicken into the breadcrumb mixture, coating both sides well.
In a large skillet, heat the olive oil over medium heat. Once hot, add the chicken breasts and cook for about 3-4 minutes on each side until golden brown.
Transfer the browned chicken to the prepared baking sheet and bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
Remove from the oven and let rest for a few minutes. Garnish with fresh parsley if desired before serving.
