In a separate bowl, combine the parsley, cilantro, minced garlic, red pepper flakes, olive oil, red wine vinegar, salt, and pepper to make the chimichurri. Mix well and set aside.
Once the skillet is hot, add the seasoned shrimp in a single layer.
Cook for 2-3 minutes on one side until they turn pink, then flip and cook for an additional 1-2 minutes.
Remove the shrimp from the skillet and drizzle with chimichurri sauce.
Serve immediately, garnished with extra herbs if desired.
