Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
In a small saucepan, combine the orange juice, honey, soy sauce, Dijon mustard, minced garlic, and ground ginger. Bring the mixture to a simmer over medium heat and cook for about 5-7 minutes, or until it thickens slightly. Remove from heat and set aside.
Season the salmon fillets with salt and pepper on both sides. Place the fillets skin-side down on the prepared baking sheet.
Brush the orange glaze generously over the salmon fillets, reserving some for later.
Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork.
During the last 2 minutes of baking, brush the salmon with the reserved glaze for extra flavor.
Remove the salmon from the oven and let it rest for a couple of minutes. Garnish with chopped green onions before serving.
