Ingredients
  

  • 1 pound salmon fillets
  • 1/2 cup fresh orange juice
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon minced garlic
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 green onions chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. In a small saucepan, combine the orange juice, honey, soy sauce, Dijon mustard, minced garlic, and ground ginger. Bring the mixture to a simmer over medium heat and cook for about 5-7 minutes, or until it thickens slightly. Remove from heat and set aside.
  3. Season the salmon fillets with salt and pepper on both sides. Place the fillets skin-side down on the prepared baking sheet.
  4. Brush the orange glaze generously over the salmon fillets, reserving some for later.
  5. Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork.
  6. During the last 2 minutes of baking, brush the salmon with the reserved glaze for extra flavor.
  7. Remove the salmon from the oven and let it rest for a couple of minutes. Garnish with chopped green onions before serving.
