Ingredients
  

  • 12 oz smoked sausage sliced
  • 8 oz pasta penne or rotini
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 bell pepper diced
  • 1 can 14.5 oz diced tomatoes
  • 4 cups chicken broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese

Method
 

  1. In a large pot, sauté the sliced smoked sausage over medium heat until browned.
  2. Add the diced onion, garlic, and bell pepper, cooking until softened.
  3. Stir in the diced tomatoes, chicken broth, Italian seasoning, salt, and pepper.
  4. Add the pasta and bring to a boil.
  5. Reduce heat and simmer until the pasta is cooked and the liquid is mostly absorbed.
  6. If desired, stir in shredded cheese until melted.
  7. Serve hot and enjoy!
