Method

Step-by-Step Instructions
  1. Begin by seasoning 1 pound of boneless, skinless chicken breasts with salt and pepper to taste. Make sure each piece is evenly coated for maximum flavor.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is shimmering, add the seasoned chicken breasts and cook them for about 5–6 minutes on each side until they are golden brown and cooked through.
  3. In the same skillet, lower the heat slightly and add your favorite BBQ sauce along with 2 tablespoons of honey, 1 tablespoon of apple cider vinegar, 1 tablespoon of Dijon mustard, 1 teaspoon of garlic powder, and 1 teaspoon of smoked paprika. Stir these ingredients well and let them simmer for about 2–3 minutes.
  4. Pour in 2 cups of chicken broth and bring the mixture to a gentle boil. Once boiling, add 8 ounces of penne pasta, stirring to ensure it's fully submerged. Cover the skillet and reduce the heat to low, allowing it to simmer for 10–12 minutes.
  5. Return the cooked chicken to the skillet with the pasta and stir gently to coat evenly. Cook for an additional 2–3 minutes until heated through.
  6. Sprinkle 1 cup of shredded mozzarella cheese and 1/2 cup of grated Parmesan cheese over the top. Cover again and cook for another 2 minutes until the cheese is melted and bubbly.
  7. Garnish with freshly chopped parsley before serving.
