- Begin by seasoning 1 pound of boneless, skinless chicken breasts with salt and pepper to taste. Make sure each piece is evenly coated for maximum flavor.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is shimmering, add the seasoned chicken breasts and cook them for about 5–6 minutes on each side until they are golden brown and cooked through.
- In the same skillet, lower the heat slightly and add your favorite BBQ sauce along with 2 tablespoons of honey, 1 tablespoon of apple cider vinegar, 1 tablespoon of Dijon mustard, 1 teaspoon of garlic powder, and 1 teaspoon of smoked paprika. Stir these ingredients well and let them simmer for about 2–3 minutes.
- Pour in 2 cups of chicken broth and bring the mixture to a gentle boil. Once boiling, add 8 ounces of penne pasta, stirring to ensure it's fully submerged. Cover the skillet and reduce the heat to low, allowing it to simmer for 10–12 minutes.
- Return the cooked chicken to the skillet with the pasta and stir gently to coat evenly. Cook for an additional 2–3 minutes until heated through.
- Sprinkle 1 cup of shredded mozzarella cheese and 1/2 cup of grated Parmesan cheese over the top. Cover again and cook for another 2 minutes until the cheese is melted and bubbly.
