For the Sauce

  • 0.25 cup Honey
For the Carb Base
  • 1 cup Rice (white or brown)
  • 1.5 cups Chicken Broth Vegetable broth is an alternative
For the Vegetables

Cooking Instructions
  1. In a large skillet over medium heat, add trimmed chicken thighs or breasts seasoned with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear each piece for about 5 minutes on each side until golden brown and cooked through.
  2. In a separate bowl, whisk together your favorite BBQ sauce and honey until well combined. Pour this mixture over the seared chicken in the skillet.
  3. Add uncooked rice to the skillet with the chicken. Pour in the chicken broth, stirring gently to combine all ingredients.
  4. Bring the mixture to a gentle simmer over medium heat, then cover the skillet with a lid. Reduce the heat to low and let it cook for approximately 20 minutes.
  5. In the final 5 minutes of cooking, sprinkle your choice of mixed vegetables over the top of the rice and chicken, and cover the skillet again.
  6. Once the timer goes off, remove the skillet from heat and let it sit, covered, for about 5 minutes. Fluff the rice gently with a fork and serve.
