- In a large skillet over medium heat, add trimmed chicken thighs or breasts seasoned with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear each piece for about 5 minutes on each side until golden brown and cooked through.
- In a separate bowl, whisk together your favorite BBQ sauce and honey until well combined. Pour this mixture over the seared chicken in the skillet.
- Add uncooked rice to the skillet with the chicken. Pour in the chicken broth, stirring gently to combine all ingredients.
- Bring the mixture to a gentle simmer over medium heat, then cover the skillet with a lid. Reduce the heat to low and let it cook for approximately 20 minutes.
- In the final 5 minutes of cooking, sprinkle your choice of mixed vegetables over the top of the rice and chicken, and cover the skillet again.
- Once the timer goes off, remove the skillet from heat and let it sit, covered, for about 5 minutes. Fluff the rice gently with a fork and serve.
