Ingredients
  

  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 package 14.4 ounces graham crackers
  • 2 cups mixed fresh berries strawberries, blueberries, raspberries
  • 1 cup Greek yogurt plain or vanilla
  • Zest of 1 lemon

Method
 

  1. In a large mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.
  2. In a separate bowl, combine the Greek yogurt and lemon zest.
  3. Gently fold the yogurt mixture into the whipped cream until well combined.
  4. Line an 8x8-inch baking dish with a layer of graham crackers, breaking them as needed to fit.
  5. Spread a layer of the whipped cream mixture over the graham crackers, then add a layer of mixed berries.
  6. Repeat the layers until all ingredients are used, finishing with a layer of the whipped cream mixture on top.
  7. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  8. Before serving, garnish with additional berries and a dusting of powdered sugar if desired.
  9. Slice into squares and enjoy!
