Preparation Steps
- In a medium bowl, combine rolled oats, honey, natural peanut butter, and vanilla extract. Stir together until sticky.
- Spray a standard muffin tin with nonstick cooking spray.
- Divide the oat mixture among the muffin cups and press down firmly.
- In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave until melted.
- Spoon the melted chocolate over each cup, spreading it evenly.
- Optionally, sprinkle sea salt over each cup while chocolate is warm.
- Transfer to the freezer for at least 1 hour to set.
- Gently twist the muffin tin to release the cups and store in an airtight container.
