Step-by-Step Instructions for Parmesan Chicken Meatloaf
  1. Preheat your oven to 200°C (400°F) and prepare a baking sheet with aluminum foil and cooking spray.
  2. In a skillet, heat olive oil and sauté diced onion and minced garlic for about 5 minutes until softened. Allow to cool.
  3. In a large mixing bowl, combine ground chicken, cooled onion and garlic, seasoned breadcrumbs, milk, Parmesan cheese, egg, parsley, Italian seasoning, and salt. Mix gently.
  4. Form a rectangular loaf on the baking sheet with two-thirds of the chicken mixture and layer mozzarella strings in the center before covering with remaining mixture.
  5. Spread marinara sauce over the top and bake for approximately 45 minutes, until internal temperature reaches 74°C (165°F) and browned.
  6. Combine panko breadcrumbs, extra Parmesan, melted butter, and parsley in a bowl for the topping.
  7. Sprinkle the breadcrumb mixture and shredded mozzarella on top and bake for an additional 15-20 minutes until golden and bubbly.
  8. Allow the meatloaf to rest for about 10 minutes before slicing.
