- Preheat your oven to 200°C (400°F) and prepare a baking sheet with aluminum foil and cooking spray.
- In a skillet, heat olive oil and sauté diced onion and minced garlic for about 5 minutes until softened. Allow to cool.
- In a large mixing bowl, combine ground chicken, cooled onion and garlic, seasoned breadcrumbs, milk, Parmesan cheese, egg, parsley, Italian seasoning, and salt. Mix gently.
- Form a rectangular loaf on the baking sheet with two-thirds of the chicken mixture and layer mozzarella strings in the center before covering with remaining mixture.
- Spread marinara sauce over the top and bake for approximately 45 minutes, until internal temperature reaches 74°C (165°F) and browned.
- Combine panko breadcrumbs, extra Parmesan, melted butter, and parsley in a bowl for the topping.
- Sprinkle the breadcrumb mixture and shredded mozzarella on top and bake for an additional 15-20 minutes until golden and bubbly.
- Allow the meatloaf to rest for about 10 minutes before slicing.
