- In a small bowl, mash one ripe avocado with the juice of half a lemon, adding a pinch of salt and pepper to taste. Set it aside.
- Lay out two slices of sourdough or artisan bread. Spread mayonnaise evenly on one side of each slice. Layer the avocado mixture on one slice, then top with shredded chicken and cheese before closing with the second slice.
- Heat a skillet over medium heat and add butter. Once melted, place the sandwich in the skillet and cook for 3–4 minutes until golden brown and cheese begins to melt.
- Gently flip the sandwich and cook for another 3–4 minutes until the other side is golden brown and cheese is fully melted.
- Remove the sandwich from the skillet, let it rest for a minute, then slice diagonally and serve warm.
