Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prick the sweet potatoes with a fork and roast for 40–50 minutes until tender.
- While sweet potatoes roast, combine all filling ingredients in a large bowl.

- Drizzle the dressing over the filling and toss until well-coated.
- Once the sweet potatoes are roasted, slice them open, fluff the flesh, and fill generously with the mixture.
