  • 1 cup Cherry Tomatoes Halved.
  • 1 medium Cucumber Finely diced.
  • 1 small Red Onion Finely diced.
  • 1/2 cup Kalamata Olives Sliced.
  • 1/2 cup Feta Cheese Crumbled.
  • Fresh Parsley Optional, for garnish.
  • Fresh Mint Optional, for garnish.
For the Dressing
  • 3 tablespoons Extra Virgin Olive Oil High quality for best flavor.
  • 2 tablespoons Lemon Juice Freshly squeezed.
  • 2 cloves Garlic Minced.
  • 1 teaspoon Dried Oregano Can substitute Italian seasoning.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prick the sweet potatoes with a fork and roast for 40–50 minutes until tender.
  3. While sweet potatoes roast, combine all filling ingredients in a large bowl.
  4. In a small bowl, whisk together the dressing ingredients until emulsified.
  5. Drizzle the dressing over the filling and toss until well-coated.
  6. Once the sweet potatoes are roasted, slice them open, fluff the flesh, and fill generously with the mixture.
  7. Serve immediately, optionally garnished with fresh herbs.
