Ingredients
  

  • 2 slices of whole grain bread
  • 1 cup fresh spinach chopped
  • 1/2 cup feta cheese crumbled
  • 1/4 cup sun-dried tomatoes chopped
  • 1/4 cup black olives sliced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon butter

Method
 

  1. In a skillet, heat the olive oil over medium heat. Add the chopped spinach and sauté for 2-3 minutes until wilted.
  2. In a bowl, combine the sautéed spinach, feta cheese, sun-dried tomatoes, black olives, garlic powder, salt, and pepper. Mix well.
  3. Spread butter on one side of each slice of bread.
  4. Place one slice of bread, butter side down, in a skillet over medium heat.
  5. Spoon the spinach mixture onto the bread in the skillet, spreading it evenly.
  6. Top with the second slice of bread, butter side up.
  7. Cook for 3-4 minutes until the bottom slice is golden brown, then carefully flip the sandwich and cook for another 3-4 minutes until the other side is golden and the cheese is melted.
  8. Remove from the skillet, let cool for a minute, then slice and serve.
