- Preheat your oven to 400°F (200°C). Lightly grease a 9x13 inch baking dish with cooking spray or olive oil.
- In a large bowl, combine the sliced zucchinis, chicken pieces, cherry tomatoes, red onion, garlic, olives, oregano, basil, red pepper flakes, olive oil, salt, and pepper. Toss everything together until well coated.
- Pour the mixture into the prepared baking dish, spreading it evenly. Sprinkle the crumbled feta cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the zucchinis are tender.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
