Ingredients
  

  • 2 medium zucchinis sliced into rounds
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion diced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup black olives sliced
  • 3 cloves garlic minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes optional
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C). Lightly grease a 9x13 inch baking dish with cooking spray or olive oil.
  2. In a large bowl, combine the sliced zucchinis, chicken pieces, cherry tomatoes, red onion, garlic, olives, oregano, basil, red pepper flakes, olive oil, salt, and pepper. Toss everything together until well coated.
  3. Pour the mixture into the prepared baking dish, spreading it evenly. Sprinkle the crumbled feta cheese on top.
  4. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the zucchinis are tender.
  5. Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
