  • 2 large zucchinis sliced into rounds
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion diced
  • 1/2 cup feta cheese crumbled
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F.
  2. In a large mixing bowl, combine the chicken pieces, zucchini, cherry tomatoes, red onion, garlic, olive oil, lemon juice, oregano, basil, salt, and pepper. Toss everything together until well coated.
  3. Transfer the mixture to a greased 9x13 inch baking dish, spreading it out evenly.
  4. Sprinkle the crumbled feta cheese over the top.
  5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. If desired, broil for an additional 2-3 minutes to lightly brown the feta cheese.
  7. Remove from the oven and let it cool for a few minutes before serving.
  8. Garnish with fresh parsley.
