Preparation
- Preheat your grill or stovetop pan over medium-high heat for about 5-7 minutes.
- In a medium bowl, whisk together olive oil, dried oregano, ground cumin, and minced garlic. Season with salt and pepper.
- Coat the chicken breasts in the prepared marinade and let them sit for at least 15 minutes.
- Grill the marinated chicken for 6-7 minutes on one side, then flip and cook until the internal temperature reaches 165°F (74°C).
- Warm the tortillas on the grill for about 30 seconds on each side or in a microwave for 20-30 seconds.
- Spread a layer of hummus over each tortilla.
- Layer the grilled chicken, cherry tomatoes, cucumber, red onion, feta cheese, Kalamata olives, and mixed greens on the hummus.
- Drizzle lemon juice over the layered ingredients.
- Roll each tortilla tightly and ensure fillings are secured inside.
- Slice each wrap in half diagonally and serve immediately.
