For the Chicken
  • 2 pieces Boneless Skinless Chicken Breasts Substitute with grilled tofu for vegetarian option.
  • ¼ cup Olive Oil Essential for marinating and flavor.

  • 1 teaspoon Ground Cumin Omit if unavailable.

For the Wrap
  • 4 pieces Whole Wheat Tortillas Large wraps preferred.

  • ½ cup Red Onion Diced; green onions can be used as a milder alternative.
  • ½ cup Feta Cheese Can substitute with goat cheese.
  • ½ cup Kalamata Olives Green olives can serve as a replacement.
  • ½ cup Hummus Can substitute with tzatziki.
  • 2 cups Mixed Greens Spinach or arugula make great alternatives.
  • 2 tablespoons Lemon Juice Crucial for balancing flavors.
Optional Ingredients
  • ½ cup Tzatziki Sauce Dipping sauce if desired.

Method
 

Preparation
  1. Preheat your grill or stovetop pan over medium-high heat for about 5-7 minutes.
  2. In a medium bowl, whisk together olive oil, dried oregano, ground cumin, and minced garlic. Season with salt and pepper.
  3. Coat the chicken breasts in the prepared marinade and let them sit for at least 15 minutes.
  4. Grill the marinated chicken for 6-7 minutes on one side, then flip and cook until the internal temperature reaches 165°F (74°C).
  5. Warm the tortillas on the grill for about 30 seconds on each side or in a microwave for 20-30 seconds.
  6. Spread a layer of hummus over each tortilla.
  7. Layer the grilled chicken, cherry tomatoes, cucumber, red onion, feta cheese, Kalamata olives, and mixed greens on the hummus.
  8. Drizzle lemon juice over the layered ingredients.
  9. Roll each tortilla tightly and ensure fillings are secured inside.
  10. Slice each wrap in half diagonally and serve immediately.
