For Seasoning

For the Finish

  • 1 medium lemon juice added at the end

  • 2 tablespoons fresh parsley optional garnish

Step-by-Step Instructions
  1. Prep all ingredients by chopping the chicken and slicing vegetables.
  2. In a large skillet, heat olive oil over medium-high heat and sear chicken until golden brown.
  3. Sauté red onion and garlic for 2 minutes, then add red bell peppers and zucchini.
  4. Combine seared chicken with sautéed vegetables, season, and add olives and sun-dried tomatoes.
  5. Finish with lemon juice and crumbled feta, serve immediately garnished with parsley.
