  2. Chop the red onion and halved cherry tomatoes, place them in the baking dish, and drizzle with olive oil, salt, and black pepper.
  3. Pat the cod fillets dry, place them on the veggies, drizzle with olive oil, lemon zest, and sprinkle with oregano.
  4. Bake in the oven for about 20 minutes until the fish is opaque and edges are slightly golden.
  5. Remove from the oven, squeeze fresh lemon juice over, garnish with parsley, and serve immediately.
