Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat. Season salmon fillets with salt and pepper.
  3. Sear the salmon fillets skin-side up in the skillet for about 3-4 minutes until golden brown, then flip and cook for an additional 2 minutes. Remove salmon and set aside.
  4. Reduce heat to medium and sauté minced garlic in the same skillet for about 1 minute until fragrant.
  5. Pour in 1/2 cup of chicken broth and 1 cup of heavy cream, stirring to combine and simmering for 3-4 minutes until slightly thickened.
  6. Add 1/2 cup of grated Parmesan cheese, 1 teaspoon of red pepper flakes, chopped sun-dried tomatoes, and juice of 1 lemon. Simmer for another 3-4 minutes.
  7. Return the seared salmon to the skillet, spooning some sauce over each fillet, and transfer to the oven.
  8. Bake for 8-10 minutes until the salmon flakes easily with a fork.
  9. Garnish with freshly chopped basil and serve immediately.
