Preparation
- Preheat your oven to 425°F (220°C).
- Core and chop the apples into ½” cubes and set aside.
- Chop the carrots diagonally into ¼” thick slices, dice the onion, and finely chop the garlic.
Making the Glaze
- In a large bowl, whisk together olive oil, maple syrup, Dijon mustard, salt, black pepper, and thyme.
Combining Ingredients
- Add the prepared carrots, apples, onion, and garlic to the bowl with the glaze, and toss until coated.
- Spread the mixture evenly onto a baking pan and roast for 15 minutes.
- Flip the vegetables and roast for an additional 10-15 minutes until tender.
- Let cool for a couple of minutes before serving.
