Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes into 1-inch pieces, toss with olive oil, salt, and pepper. Spread on a baking sheet.
  3. In a mixing bowl, whisk together Dijon mustard, maple syrup, apple cider vinegar, and olive oil. Add thyme, salt, and pepper.
  4. Marinate chicken thighs in the marinade for at least 10 minutes.
  5. After 15 minutes, add marinated chicken to the baking sheet with sweet potatoes and roast for an additional 15-20 minutes.
  6. Check that chicken is cooked through, reaching an internal temperature of 165°F (75°C).
  7. Serve chicken and sweet potatoes in bowls, garnished with fresh spinach or kale.
