Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F. Cook brown or wild rice according to package directions (30-40 minutes).
  2. Wash, peel, and cube sweet potatoes. Halve or quarter Brussels sprouts. Toss with olive oil, salt, pepper, and optional spices.
  3. Spread seasoned sweet potatoes and Brussels sprouts on a lined baking sheet and roast for 25-30 minutes, stirring halfway.
  4. Whisk together maple syrup and Dijon mustard. Season chicken breasts with salt and pepper.
  5. Heat olive oil in a skillet. Sear chicken for 5-6 minutes on each side, brushing with glaze during the last 2 minutes.
  6. Let chicken rest for 5 minutes before slicing.
  7. Assemble bowls with rice, roasted veggies, and chicken. Drizzle with remaining glaze and add optional toppings.
