Ingredients

  • 1 pound large shrimp peeled and deveined
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley chopped (optional)
  • Cooking spray or olive oil for drizzling

Method

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper and lightly spray it with cooking spray or drizzle with olive oil.
  2. In a shallow bowl, combine the flour, garlic powder, paprika, salt, and black pepper. In another bowl, beat the eggs. In a third bowl, mix the panko breadcrumbs and Parmesan cheese.
  3. Dip each shrimp first into the flour mixture, shaking off the excess, then into the beaten eggs, and finally coat with the panko mixture, pressing gently to adhere.
  4. Arrange the coated shrimp in a single layer on the prepared baking sheet. Lightly spray the tops with cooking spray or drizzle with a little olive oil for extra crispiness.
  5. Bake in the preheated oven for 12-15 minutes, or until the shrimp are golden brown and cooked through. If desired, broil for an additional 1-2 minutes for extra crispiness.
  6. Remove from the oven and sprinkle with fresh parsley before serving.
