For the Meatloaf Base
  • 1 pound Ground Beef can substitute with ground turkey or lamb
  • 1 medium Onion finely chopped; shallots work well
  • 1 cup Breadcrumbs can substitute with crushed crackers or gluten-free breadcrumbs
  • 1 large Egg can swap for a flax egg to make it vegan
  • 1/2 cup Milk can substitute with almond or soy milk
  • 1 teaspoon Salt adjust to taste
  • 1/2 teaspoon Pepper adjust to taste
For the Mac and Cheese Layer
  • 2 cups Macaroni can substitute with gluten-free pasta
  • 2 tablespoons Butter can use olive oil as a lighter alternative
  • 2 tablespoons Flour can consider cornstarch or gluten-free flour
  • 1 1/2 cups Cheese cheddar; can mix in mozzarella or gouda
  • 1 teaspoon Paprika adjust to taste
  • 1 teaspoon Dry Mustard adjust to taste

  • 1 cup Vegetables such as spinach or bell peppers

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C). Grease your baking dish lightly.
  2. In a large mixing bowl, combine ground beef, onion, breadcrumbs, egg, milk, salt, and pepper. Mix well and press into the bottom of the baking dish.
  3. Bake for about 20 minutes or until slightly cooked through.
  4. Cook macaroni according to package directions until just al dente, then drain and set aside.
  5. In a medium saucepan, melt butter, add flour, then whisk in milk until thickened. Stir in seasonings and 1½ cups of shredded cheese until smooth.
  6. Gently mix macaroni into cheese sauce and pour over the meatloaf layer. Sprinkle remaining cheese on top.
  7. Return to oven and bake for an additional 25 minutes until cheese is melted and golden brown.
  8. Remove from the oven, allow to rest for a few minutes, then cut into squares and serve.
