Ingredients
  

  • 4 large russet potatoes
  • 8 ounces cooked bacon chopped
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup green onions sliced
  • 4 large eggs
  • Salt and pepper to taste
  • Olive oil for rubbing

Method
 

  1. Preheat your oven to 400°F.
  2. Wash the potatoes thoroughly and pat them dry. Rub each potato with a little olive oil and sprinkle with salt.
  3. Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.
  4. While the potatoes are baking, cook the eggs to your preference (scrambled, fried, or poached). Season with salt and pepper.
  5. Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Cut a slit down the center of each potato and gently squeeze the ends to open them up.
  6. Fluff the insides of the potatoes with a fork and add a dollop of sour cream, followed by the chopped bacon, shredded cheese, and cooked eggs.
  7. Top with sliced green onions and additional salt and pepper if desired. Serve immediately.
