Preparation Steps
- Preheat your oven to 425°F (220°C). Wash and dice the russet potatoes into uniform cubes.
- Toss the potato pieces with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper.
- Spread the seasoned potato cubes on a baking sheet and bake for 25–30 minutes, stirring halfway through.
- In a skillet over medium-high heat, brown the ground beef or turkey for about 5–7 minutes.
- Add chili powder, cumin, and chopped red onion to the skillet and cook for another 5 minutes.
- Stir in black beans and corn, heating through for about 3–4 minutes.
- Layer roasted potatoes in bowls followed by the meat mixture and shredded cheese.
- Top with cherry tomatoes, avocado slices, cilantro, and squeeze lime over each bowl.
- Serve hot with a dollop of sour cream on top.
