  • 4 medium Russet Potatoes or sweet potatoes for a sweeter surprise
  • 2 tablespoons Olive Oil or avocado oil
  • 1 teaspoon Garlic Powder or fresh garlic

  • 1 teaspoon Smoked Paprika or regular paprika

  • 1 small Red Onion or yellow onion

  • 1 cup Corn Kernels fresh, canned, or frozen
  • 1 cup Shredded Cheddar Cheese or dairy-free cheese
  • 1 cup Cherry Tomatoes or diced tomatoes
  • 1 medium Avocado or guacamole
  • 1 bunch Fresh Cilantro or parsley
  • 2 Wedges Lime or lemons
  • 1/2 cup Sour Cream or Greek yogurt

Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C). Wash and dice the russet potatoes into uniform cubes.
  2. Toss the potato pieces with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. Spread the seasoned potato cubes on a baking sheet and bake for 25–30 minutes, stirring halfway through.
  4. In a skillet over medium-high heat, brown the ground beef or turkey for about 5–7 minutes.
  5. Add chili powder, cumin, and chopped red onion to the skillet and cook for another 5 minutes.
  6. Stir in black beans and corn, heating through for about 3–4 minutes.
  7. Layer roasted potatoes in bowls followed by the meat mixture and shredded cheese.
  8. Top with cherry tomatoes, avocado slices, cilantro, and squeeze lime over each bowl.
  9. Serve hot with a dollop of sour cream on top.
