  • 2/3 cup Ranch Dressing divided

  • 1 tablespoon Dried Oregano
  • 1 teaspoon Paprika

For the Toppings
  • 6 slices Bacon cooked and crumbled
  • 2 cups Mexican Cheese Blend shredded
  • 1/4 cup Green Onions chopped

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 450°F (232°C).
  2. Dice the Yukon gold potatoes and toss them with ⅓ cup ranch dressing, parsley, oregano, paprika, salt, and pepper. Bake for 30 minutes.
  3. Dice the chicken and combine with the remaining ⅓ cup ranch dressing. Season with salt and pepper.
  4. Layer the seasoned chicken over the baked potatoes and cover with foil. Reduce oven temperature to 400°F (204°C) and bake for 20 minutes.
  5. Remove the foil, sprinkle bacon and cheese on top, and bake for an additional 10 minutes.
  6. Top with chopped green onions before serving.
