- Preheat the oven to 375°F (190°C).
- In a large pot, bring salted water to a boil and cook the rotini pasta until just under al dente, about 7-8 minutes. Drain and set aside.
- Heat a skillet over medium heat and drizzle in olive oil. Add ground beef, cooking until browned (7-10 minutes).
- Season the browned beef with salt, pepper, and ranch seasoning mix. Stir and let flavors meld for 2-3 minutes.
- In a large bowl, combine cooked rotini, seasoned beef, sweet corn, and ranch dressing. Stir gently to coat.
- Fold in 1 ½ cups of shredded cheddar cheese until evenly distributed.
- Transfer the mixture into a greased 9x13-inch baking dish, spreading it evenly.
- Sprinkle the remaining ½ cup of shredded cheddar cheese on top.
- Bake uncovered for 25-30 minutes until the cheese is melted and bubbly.
