  • 1 cup Sweet Corn Fresh, frozen, or canned corn can be used.
For the Creaminess
  • 1 cup Ranch Dressing A homemade ranch dressing can be substituted.
  • 2 cups Cheddar Cheese (Shredded) Other meltable cheeses like mozzarella or Monterey Jack can be used.

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, bring salted water to a boil and cook the rotini pasta until just under al dente, about 7-8 minutes. Drain and set aside.
  3. Heat a skillet over medium heat and drizzle in olive oil. Add ground beef, cooking until browned (7-10 minutes).
  4. Season the browned beef with salt, pepper, and ranch seasoning mix. Stir and let flavors meld for 2-3 minutes.
  5. In a large bowl, combine cooked rotini, seasoned beef, sweet corn, and ranch dressing. Stir gently to coat.
  6. Fold in 1 ½ cups of shredded cheddar cheese until evenly distributed.
  7. Transfer the mixture into a greased 9x13-inch baking dish, spreading it evenly.
  8. Sprinkle the remaining ½ cup of shredded cheddar cheese on top.
  9. Bake uncovered for 25-30 minutes until the cheese is melted and bubbly.
  10. Let cool for about 5 minutes before serving. Optional: garnish with chopped parsley or chives.
