Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup lemon juice freshly squeezed
  • 1 tablespoon lemon zest
  • 2 tablespoons poppy seeds
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Method
 

  1. In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), lemon juice, lemon zest, poppy seeds, vanilla extract, and salt.
  2. Mix all the ingredients together until well combined. If the mixture is too sticky, add a little more oats until it reaches a manageable consistency.
  3. Use your hands to form the mixture into small balls, about 1 inch in diameter.
  4. Place the energy bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
  5. Once chilled, transfer the energy bites to an airtight container for storage. They can be kept in the refrigerator for up to one week or frozen for longer storage.
