  • 4 cloves garlic minced
  • 1 lemon zested and juiced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound asparagus trimmed
  • 1 cup cherry tomatoes halved
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat the oven to 400°F (200°C). Line a large sheet pan with parchment paper or aluminum foil for easy cleanup.
  2. In a small bowl, whisk together the melted butter, minced garlic, lemon zest, lemon juice, oregano, salt, and black pepper.
  3. Place the salmon fillets in the center of the prepared sheet pan. Arrange the asparagus and cherry tomatoes around the salmon.
  4. Drizzle the lemon garlic butter mixture evenly over the salmon and vegetables.
  5. Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and the asparagus is tender.
