Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 1 pound fresh green beans trimmed
  • 4 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 1 lemon juiced and zested
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley chopped (for garnish)

Method

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the lemon juice, lemon zest, minced garlic, oregano, paprika, salt, and pepper. Add the chicken thighs and toss to coat evenly. Let marinate for at least 15 minutes.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the marinated chicken thighs and sear for about 4-5 minutes on each side until golden brown.
  4. Once the chicken is browned, remove it from the skillet and set aside. In the same skillet, add the green beans and sauté for 2-3 minutes.
  5. Add the butter to the skillet, allowing it to melt. Return the chicken to the skillet, spooning some of the melted butter and garlic over the top.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
  7. Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.
