Method
 

Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C).
  2. In a large pot, heat vegetable oil over medium-high heat. Brown the beef chuck roast for 4-5 minutes on each side.
  3. Remove the beef, add sweet onion, garlic, and ginger to the pot, sautéing for 5 minutes.
  4. In a separate bowl, mix gochujang, brown sugar, soy sauce, and beef broth, then pour over the sautéed aromatics.
  5. Nestle the browned beef into the pot, cover and bake for 3 to 4 hours until fork-tender.
  6. Let the roast rest for 15 minutes, then slice and serve over cooked rice with sauce, cilantro, and kimchi.
