Preparation
- Preheat oven to 350°F (175°C) and prepare muffin tin.
- Mix dry ingredients: almond flour, coconut flour, baking powder, baking soda, salt, and powdered sweetener.
- Beat cream cheese until smooth. Add eggs, melted butter, heavy cream, lemon zest, lemon juice, and vanilla extract.
- Combine wet and dry ingredients until just mixed.
- Fill muffin cups 3/4 full with batter and optionally sprinkle with sweetener or lemon zest.
- Bake for 18-22 minutes or until golden and toothpick comes out clean.
- Cool in the tin for 10 minutes, then transfer to a wire rack.
