Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and prepare muffin tin.
  2. Mix dry ingredients: almond flour, coconut flour, baking powder, baking soda, salt, and powdered sweetener.
  3. Beat cream cheese until smooth. Add eggs, melted butter, heavy cream, lemon zest, lemon juice, and vanilla extract.
  4. Combine wet and dry ingredients until just mixed.
  5. Fill muffin cups 3/4 full with batter and optionally sprinkle with sweetener or lemon zest.
  6. Bake for 18-22 minutes or until golden and toothpick comes out clean.
  7. Cool in the tin for 10 minutes, then transfer to a wire rack.
