- Pat halibut fillets dry with paper towels and season both sides with garlic powder, paprika, sea salt, and pepper.
- In a large non-stick skillet, heat olive oil or butter over medium-high heat until shimmering.
- Gently place halibut fillets in the skillet and cook undisturbed for about 4 minutes, then flip and cook for another 3-4 minutes.
- Remove halibut from skillet. In the same skillet, melt additional butter, add fresh minced garlic, sauté for 30 seconds, then pour in lemon juice.
- Plate the halibut and drizzle the garlic-lemon butter sauce over the top.
