Ingredients

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour

Method

  1. Preheat your oven to 350°F.
  2. In a large mixing bowl, combine the peanut butter, granulated sugar, and brown sugar. Mix until well blended.
  3. Add the eggs and vanilla extract, and beat until smooth.
  4. In a separate bowl, whisk together the baking soda, salt, and flour.
  5. Gradually add the dry ingredients to the peanut butter mixture, stirring until just combined.
  6. Scoop tablespoon-sized balls of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  7. Use a fork to flatten each cookie slightly and create a crisscross pattern on top.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

  • This recipe makes about 24 cookies.
  • For a twist, try adding 1/2 cup of chocolate chips or chopped nuts to the dough before baking.
  • You can substitute half of the all-purpose flour with whole wheat flour for a nuttier flavor and added nutrition.
