  • 1 cup cooked quinoa cooled

  • 1 cup halved cherry tomatoes
  • 1/2 cup diced red bell pepper
  • 1/2 cup crumbled feta cheese
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Method
 

  1. In a large bowl, combine the cooked quinoa, cucumber, cherry tomatoes, red bell pepper, feta cheese, red onion, and parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, black pepper, and garlic powder until well combined.
  3. Pour the dressing over the salad mixture and toss gently to combine.
  4. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve chilled or at room temperature.
