Ingredients
  

  • 8 egg roll wrappers
  • 8 ounces cream cheese softened
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup diced jalapenos fresh or pickled
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg beaten (for sealing the egg rolls)
  • Oil for frying vegetable or canola

Method
 

  1. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, diced jalapenos, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  2. Lay an egg roll wrapper on a clean surface with one corner facing you. Place about 2 tablespoons of the cheese mixture in the center of the wrapper.
  3. Fold the bottom corner of the wrapper over the filling, then fold in the sides. Roll it up tightly, sealing the top corner with a little beaten egg.
  4. Repeat the process with the remaining wrappers and filling.
  5. In a large skillet, heat about 2 inches of oil over medium heat until it reaches 350°F.
  6. Carefully add a few egg rolls to the hot oil, frying them for about 3-4 minutes on each side or until golden brown and crispy.
  7. Remove the egg rolls from the oil and place them on a paper towel-lined plate to drain excess oil.
  8. Serve warm with your favorite dipping sauce, such as ranch or spicy mayo.
