Ingredients
  

  • 8 ounces fettuccine pasta
  • 1 tablespoon olive oil
  • 1 pound Italian sausage mild or spicy, casings removed
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook until browned and cooked through, breaking it apart with a spoon, about 5-7 minutes.
  3. Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
  4. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese and Italian seasoning. Mix until the cheese is melted and the sauce is creamy.
  5. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached. Season with salt and pepper to taste.
  6. Add the cooked fettuccine to the skillet and toss to coat the pasta in the creamy sauce.
  7. Serve immediately, garnished with chopped fresh parsley.
