Step‑by‑Step Instructions
  1. Prepare the Marinade: In a medium bowl, whisk together fish sauce, soy sauce, honey, minced garlic, minced lemongrass, vegetable oil, black pepper, sugar, and lime juice until smooth.
  2. Marinate Chicken Thighs: Place the chicken thighs in a zip-lock bag or shallow dish. Pour the marinade over the chicken, ensuring thorough coating. Seal and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat the Grill: About 15 minutes before grilling, preheat your grill to medium-high heat, aiming for 400°F (200°C).
  4. Prepare the Chicken for Grilling: Remove the chicken from the marinade and let excess drip off. Discard leftover marinade.
  5. Grill the Chicken: Place chicken on the grill and cook for 4-5 minutes on one side, then flip and cook for another 4-5 minutes until the internal temperature reaches 165°F (74°C).
  6. Rest the Grilled Chicken: Let the cooked chicken rest for about 5 minutes before slicing.
  7. Serve with Garnishes: Slice the chicken, garnish with cilantro, and serve with cucumbers and lime wedges.
