  • 1 teaspoon Tajin or Trader Joe's Everything but the Elote Seasoning Blend Any chili powder mix can substitute.
  • 4 ounces ⅓ Less-Fat Cream Cheese Feel free to use full-fat for richer taste.
  • ¼ cup Light Sour Cream Greek yogurt serves as a healthy alternative.
  • 7 ounces Cotija Cheese, grated Feta or Parmesan can be used as substitutes.
For Garnish
  • Fresh Cilantro Optional if cilantro isn't preferred.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C), adjusting one rack to the center and another six inches from the broiler.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the scallions and sauté for 2-3 minutes.
  3. Stir in the corn kernels and Tajin seasoning, continuing to sauté for 3-5 minutes until corn is tender.
  4. Reduce heat and add cream cheese to the corn mixture, stirring until fully melted and combined.
  5. In a bowl, mix the sautéed mixture with sour cream and Cotija cheese until well combined.
  6. Transfer the mixture back to the skillet and bake for 10-12 minutes until bubbly and golden brown.
  7. Switch oven to broil, sprinkle remaining Cotija cheese on top, and broil for 2-3 minutes until browned.
  8. Remove from oven, garnish with scallion greens and cilantro, and serve immediately with chips or veggies.
