- Preheat your oven to 350°F (175°C), adjusting one rack to the center and another six inches from the broiler.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the scallions and sauté for 2-3 minutes.
- Stir in the corn kernels and Tajin seasoning, continuing to sauté for 3-5 minutes until corn is tender.
- Reduce heat and add cream cheese to the corn mixture, stirring until fully melted and combined.
- In a bowl, mix the sautéed mixture with sour cream and Cotija cheese until well combined.
- Transfer the mixture back to the skillet and bake for 10-12 minutes until bubbly and golden brown.
- Switch oven to broil, sprinkle remaining Cotija cheese on top, and broil for 2-3 minutes until browned.
- Remove from oven, garnish with scallion greens and cilantro, and serve immediately with chips or veggies.
