Ingredients
  

For the Crust
  • 24 cookies Oreo cookies Crushed
  • 6 tablespoons unsalted butter Melted
For the Filling
  • 8 ounces 60% cocoa chocolate bars Chopped
  • 1 cup heavy cream Divided
  • ½ cup Baileys Irish cream Can be omitted for non-alcoholic
  • 1 teaspoon vanilla extract
  • 1 tablespoon espresso powder Instant coffee can be used
  • 1 pinch fine sea salt
  • 6 tablespoons unsalted butter Melted
For the Whipped Cream Topping
  • 1 cup additional heavy cream
  • 2 tablespoons confectioners' sugar Granulated sugar can be used
  • 1 cup chocolate shavings Optional garnish

Method
 

Prepare Crust
  1. Spray a 9-inch springform pan with non-stick cooking spray. Crush Oreo cookies into fine crumbs and combine with melted unsalted butter. Press into the bottom of the pan and freeze for 30 minutes.
Make Filling
  1. Heat 1 cup of heavy cream and ½ cup of Baileys in a saucepan until it simmers. Pour over chopped chocolate bars, stir until melted. Add vanilla extract, espresso powder, and fine sea salt, and mix well.
Set Pie
  1. Pour the chocolate filling into the chilled crust, spreading evenly. Refrigerate for at least 3 hours until fully set.
Prepare Whipped Cream
  1. Beat 1 cup of heavy cream and 2 tablespoons of confectioners' sugar in a mixing bowl until medium-soft peaks form.
Serve
  1. Remove the pie from the springform pan. Top with whipped cream and chocolate shavings, slice, and enjoy.
