Prepare Crust
- Spray a 9-inch springform pan with non-stick cooking spray. Crush Oreo cookies into fine crumbs and combine with melted unsalted butter. Press into the bottom of the pan and freeze for 30 minutes.
Make Filling
- Heat 1 cup of heavy cream and ½ cup of Baileys in a saucepan until it simmers. Pour over chopped chocolate bars, stir until melted. Add vanilla extract, espresso powder, and fine sea salt, and mix well.
Set Pie
- Pour the chocolate filling into the chilled crust, spreading evenly. Refrigerate for at least 3 hours until fully set.
Prepare Whipped Cream
- Beat 1 cup of heavy cream and 2 tablespoons of confectioners' sugar in a mixing bowl until medium-soft peaks form.
Serve
- Remove the pie from the springform pan. Top with whipped cream and chocolate shavings, slice, and enjoy.
