- Preheat the oven to 400°F (200°C) and line baking sheets with parchment paper.
- Roll out the thawed puff pastry to a thickness of about 1/8 inch and cut out 24 circles using a 2-inch round cutter.
- Create small indentations in the center of each pastry circle using your thumb or the back of a spoon.
- Fill each indentation with about 1 tablespoon of soft goat cheese.
- Bake in the preheated oven for 8–10 minutes until puffed and golden brown.
- Drizzle warm pastries with honey and sprinkle with fresh thyme.
- Serve warm on a platter and enjoy!
