  1. Begin by heating a non-stick skillet over medium heat. Add a small knob of butter, approximately one tablespoon, and allow it to melt completely, swirling it around to coat the skillet evenly.
  2. Crack one large egg gently into the skillet and season it with a pinch of salt and pepper. Cook the egg for 4-5 minutes, allowing the white to set while keeping the yolk runny.
  3. In the same skillet, place one flour tortilla and sprinkle half of the shredded cheese generously on top. Let it sit for about 1 minute until the cheese begins to melt slightly. Then, layer the fried eggs on top of the cheese, adding avocado slices, and finally, top with the remaining cheese.
