Method
 

Step-by-Step Instructions
  1. Prepare the beef by rinsing the short ribs under cold water, then patting them dry.
  2. In a large mixing bowl, whisk together soy sauce, brown sugar, rice vinegar, hoisin sauce, minced ginger, minced garlic, sesame oil, chili paste, and black pepper.
  3. Coat the ribs thoroughly with the marinade and refrigerate for at least 2 hours or overnight.
  4. Preheat your oven to 325°F (160°C) and remove the ribs from the refrigerator.
  5. In a skillet, sear the marinated short ribs for 3-4 minutes on each side until browned.
  6. Transfer the seared ribs to a roasting pan and pour any remaining marinade over the ribs.
  7. Cover the pan tightly with aluminum foil and roast for 3-4 hours until fork-tender.
  8. Remove the foil during the last 30 minutes of cooking to allow the ribs to caramelize.
  9. Check the tenderness of the ribs and return to the oven for additional cooking if necessary.
  10. Let the ribs rest for 10-15 minutes before slicing and garnishing.
