Preparation
- Preheat your oven to 325°F (160°C) and prepare a 9-inch springform pan by greasing it.
- Combine graham cracker crumbs with melted unsalted butter and press into the springform pan.
- Bake the crust for 10 minutes, then let it cool.
- Beat cream cheese and sugar until smooth, then add eggs one at a time and finally the Baileys.
- Pour the filling over the cooled crust and bake for 50-60 minutes.
- Cool at room temperature for around an hour, then refrigerate for at least 4 hours or overnight.
- Prepare ganache by heating cream and chocolate until melted and smooth.
- Pour ganache over the chilled cheesecake and let it set.
- Slice and garnish as desired before serving.
