  • 8 oz Cream Cheese softened
  • 1 tsp Garlic Powder or fresh minced garlic
For the Toppings
  • 1 cup Mixed Olives chopped
  • 1/2 cup Roasted Red Peppers chopped
  • 1/4 cup Fresh Herbs e.g., parsley, basil, chopped
  • 2 tbsp Olive Oil or avocado oil
  • 1/4 cup Dried Cranberries for garnish
  • 2 tbsp Fresh Rosemary or Parsley for garnish

Method
 

Preparation
  1. In a medium bowl, combine softened cream cheese and garlic powder. Blend until smooth and creamy, about 2 minutes.
  2. Spoon the cream cheese mixture onto a plastic wrap and shape it into a log. Wrap tightly and refrigerate for at least 30 minutes.
  3. Finely chop the mixed olives, roasted red peppers, and fresh herbs. Add olive oil and mix well. Set aside.
  4. Remove the log from the refrigerator and unwrap it. Place it on a platter and press the topping mixture onto the surface evenly.
  5. Sprinkle dried cranberries and fresh herbs on top as garnish.
  6. Serve with an assortment of crackers, crostini, or fresh bread.
