Preheat your oven to 400°F (200°C).
Pat the chicken breasts dry with paper towels and season both sides with salt and black pepper.
In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and sear for about 5 minutes on each side until golden brown.
While the chicken is cooking, in a small bowl, mix together the honey, red pepper flakes, and lemon juice.
Once the chicken is browned, pour the honey mixture over the chicken breasts, then sprinkle the crumbled feta cheese on top.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
Remove from the oven and let it rest for 5 minutes. Garnish with chopped parsley before serving.
