Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a small bowl, whisk together honey, soy sauce, olive oil, garlic powder, black pepper, and salt until well combined.
Place the salmon fillets skin-side down on the prepared baking sheet. Brush the honey mixture generously over the top of each fillet.
Scatter the diced pineapple around the salmon on the baking sheet.
Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and is cooked through.
For extra crispiness, switch the oven to broil for the last 2-3 minutes of cooking, keeping a close eye to prevent burning.
Remove from the oven and let rest for a couple of minutes. Garnish with fresh cilantro and serve with lime wedges on the side.
