Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • 1/2 cup plain Greek yogurt
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1/2 cup celery diced
  • 1/2 cup red grapes halved
  • 1/4 cup red onion finely chopped
  • 1/4 cup chopped walnuts optional
  • Salt and pepper to taste
  • Mixed greens or lettuce for serving

Method
 

  1. In a large bowl, combine the Greek yogurt, honey, and Dijon mustard. Mix until smooth and well combined.
  2. Add the shredded chicken, diced celery, halved grapes, red onion, and walnuts (if using) to the bowl. Stir gently until all ingredients are evenly coated with the dressing.
  3. Season with salt and pepper to taste. Adjust the sweetness or tanginess by adding more honey or mustard if desired.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve the chicken salad over a bed of mixed greens or lettuce. Enjoy!
