For the Chicken
  • 4 pieces Boneless Skinless Chicken Breasts or chicken thighs for more juiciness
  • 3 tablespoons Honey or maple syrup for vegan option
  • 1 tablespoon Lime Juice fresh is preferred
  • 1 teaspoon Lime Zest preferably from organic limes
  • 2 cloves Garlic Cloves minced, fresh is best
  • Salt and Pepper to taste
For the Rice
  • 2 cups Cooked Rice white, brown, or quinoa for gluten-free
  • 1/4 cup Fresh Coriander or parsley as a substitute
For the Topping
  • 2 pieces Ripe Avocados ensure they are ripe for best experience

Method
 

Instructions
  1. Begin by generously seasoning both sides of the boneless skinless chicken breasts with salt and pepper. Let them sit for about 10 minutes at room temperature to enhance their flavor and ensure they cook evenly.
  2. In a small mixing bowl, whisk together honey, freshly squeezed lime juice, lime zest, and minced garlic until smooth.
  3. Heat a skillet over medium-high heat and add a drizzle of neutral oil. Once hot, carefully place the seasoned chicken breasts in the skillet. Cook for about 6-7 minutes on each side.
  4. In the final 2 minutes of cooking, generously brush the honey lime glaze over the chicken breasts, ensuring even coating.
  5. Once cooked, remove the chicken from the skillet and place on a cutting board. Allow to rest for 5 minutes.
  6. While the chicken rests, combine your cooked rice with chopped fresh coriander and a squeeze of lime juice, and season with salt.
  7. Slice the ripe avocados and lightly toss with lime juice, salt, and pepper.
  8. Using a ring mold, start assembling your stack with a layer of the flavorful rice, followed by the sliced avocados, and then add the sliced honey lime chicken on top.
  9. Serve immediately for the best experience.
