Step-by-Step Instructions
  1. Prepare the Marinade: Whisk together honey, lime juice, olive oil, minced garlic, ground cumin, salt, and pepper in a mixing bowl until smooth.
  2. Marinate the Chicken: Place chicken breasts in a resealable bag, pour marinade over them, seal, and refrigerate for 30 minutes to 4 hours.
  3. Cook the Rice: In a pot, combine rice and chicken broth (or water) and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes.
  4. Preheat the Grill: Preheat your grill to medium-high heat (375°F to 400°F).
  5. Grill the Chicken: Remove chicken from marinade and grill for 6-7 minutes per side until cooked through and nicely charred.
  6. Create the Avocado Rice Mixture: In a large bowl, combine cooked rice, diced avocado, cherry tomatoes, red onion, and cilantro. Toss gently.
  7. Assemble the Stacks: Layer avocado rice mixture in a serving bowl, add grilled chicken slices, creating a stack.
